These cucumber roll-ups are a fun twist on traditional veggies with dip. You can use any of your favorite dressings or sauces to create a platter of delicious finger food–> perfect for a light meal or snack.

Cucumber Roll Ups
makes as many as you’d likeIngredients:
1 large cucumber
Raw Bean-Free Hummus
Sun Dried Tomato Sauce (recipe below)Directions:
To create your cucumber rolls, you’ll need a mandolin or a wide vegetable peeler. Slice the cucumber lengthwise, into very thin slices.
Because they are so thin, you’ll want to double-up the slices for each roll, like so:
Apply a thin layer of of hummus lengthwise down each slice.
Then roll up, and top each roll with a dollop of tomato sauce!
And to think, I was tempted to just have cucumber slices with hummus for lunch.
These roll-ups are way more fun!

While you can create a variety of flavor combinations using any dips or sauces you like (this pesto would be delicious, and you could make a kid-friendly version using almond butter and honey), I loved this pairing of hummus + tomato sauce.
Sun Dried Tomato Sauce
makes about 1 1/2 cupsIngredients:
3 oz. sun dried tomatoes
2 roasted red peppers (here’s an easy how-to-guide on roasting peppers)
1/2 cup water
2 cloves raw garlic
1/4 cup fresh basil
1/2 teaspoon salt, or to tasteDirections:
In a high-speed blender, blend all the ingredients until smooth and creamy.
This makes a very thick, richly tomato-flavored sauce. Feel free to add more liquid, or adjust the ingredients, to suit your tastes!

Next time, I think I’ll reduce the amount of sun dried tomatoes, to bring out the roasted red pepper flavor a bit more. (I can’t get enough of roasted red peppers lately!)

Is it possible to make these roll-ups beforehande! Some other cucumber rollups I have made previously disintegrated and was a mesh by the time I wanted to serve it!
