Served this alongside meat lasagna and even the meat lovers thought it was delicious. I have a lot of mushroom haters but they too enjoyed this version. The mushroom cooking method changes the texture so that there is no slimy business.

I made this last week and we loved it! We are big meat eaters and didn’t miss the meat, with all of the mushrooms & other flavors! I also sautéed our home grown collards and mixed them in with the ricotta.

This was SO GOOD! I am not usually a fan of eggplant. You’ve completely changed my opinion with this dish! I even had my hesitant family taste it, and they thought the taste and texture were awesome. Yay!

I’m not sure when you posted this comment, but Daiya cheese is vegan, so it doesn’t contain any animal products, so you won’t get an allergic reaction from it! I know Wegmans sells it… haven’t checked around for other stores. Daiya is gluten free too, in case you were wondering. daiyafoods.com has a whole list of the imitation cheeses they have!
