This Greek Salad Dressing tastes better than any store-bought dressing, and comes together in just minutes. All you need is a few simple ingredients to get started, and you probably already have them on hand!
What is Greek Salad Dressing Made Of?
Classic Greek salad dressing is made with a combination of extra-virgin olive oil, red wine vinegar, a touch of lemon juice, plenty of garlic, and dried oregano. Then you just need to season it with salt and pepper!
I tend to use slightly less olive oil than traditional recipes because I don’t like my lettuce to feel too oily, and this cuts back on the overall calories, too. Be sure to season it with plenty of salt if you want a restaurant-quality dressing, to make the flavor really pop! (Some restaurants actually salt the salad veggies before serving them, too.)
I like to use apple cider vinegar instead of red wine vinegar in this recipe, too, because it’s thought to have some potential health benefits. The acetic acid in apple cider vinegar may help to kill harmful bacteria (source) and has been shown to lower blood sugar levels after meals. (source)
What Does Greek Salad Dressing Taste Like?
Greek salad dressing has a bold and sharp flavor, with strong notes of garlic, tangy vinegar, and salt. The oregano really stands out, as well, giving your salads a well-rounded flavor before you even start adding more toppings.
Most dressing recipes call for a touch of added sugar to balance the acidity, but Greek salad dressing doesn’t need that. It’s a sharp and savory dressing that pairs well with crunchy romaine lettuce, sweet red onions, and salty feta cheese.
How Long Does Homemade Greek Salad Dressing Last?
This dressing should last up to a week in the fridge when you keep it stored in an airtight container. (And possibly longer– we usually use it all by then!)

How to Make Greek Salad Dressing (1-Minute Video):
Greek Salad Dressing
Ingredients
- 1/3 cup olive oil
- 3 tablespoons raw apple cider vinegar
- 1 tablespoons fresh lemon juice
- 2 small garlic cloves , minced
- 1/2 teaspoon spicy brown mustard (or Dijon)
- 1 teaspoon dried oregano
- 3/4 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Combine all of the ingredients in a glass jar, seal the lid, and shake until emulsified. (I like to use glass mason jars for this purpose, so you can just screw on the lid and shake, and then it's ready to store.)
- You can serve this right away, but like most dressings, the flavor will get better as the ingredients meld together. For best results, wait at least 30 minutes before serving over your favorite salad ingredients.
- Leftover dressing can be stored in the fridge for up to a week.

This is kind of a weird question, but how large are your salads usually? This looks like a small plate. Is that typical of what you would actually eat or is it just for the picture?
The way I see it, if the fork pictured is a salad fork, the plate is about 6.5 inches in diameter. If it’s a dinner fork, then the plate pictured is about 8 inches in diameter.
Made this dressing and to be honest I wasn’t sure at first. It did seem a little to oily and had quite a sharp taste. But once mixed with the salad it was absolutely gorgeous. Will definitely be making this again. Thank you

I love the Greek salad dressing recipe. It is very close to authentic. However, a real Greek salad does not have lettuce. ( I am Greek) An authentic Greek salad is made with tomatoes, cucumber, red onion, slice green peppers, kalamata olives and feta cheese. You then top iit with oregano and salad dressing.

Yes, olive oil can do that in a dressing. If you leave it at room temperature or run the jar it under warm water it should thin out again.

I believe this used to be Paleo Greek Dressing.and it called for 1/2 cup of oil and juice from 1/2 a lemon.
It is the best dressing. I use it all the time.

Sorry to disappoint! I never used the word Paleo in the title– it was called “Classic” Greek Dressing before. The update reflects a more accurate measurement, as lemons vary SO MUCH in size. Juice from half a lemon isn’t very clear; it could be 1 tablespoon or 2 tablespoons, or even more, and I prefer to be more clear for my readers, especial for those new to cooking. I found the original to be too oily for my taste so I reduced the oil by 1 tablespoon– but you’re welcome to use the full 1/2 cup still, if you like!
I am a 61 year old diabetic and have been searching for recipes to lower my blood sugar I am so happy with this that I mix it in my warm Macha tea and Twinnings Chia tea in a litre drink bottle. The benefits of this is my sugar levels have reduced by half and no longer need insulin
