Over the past couple weeks, I’ve really gotten into using Pinterest.
Yes, I know I’m a little late to the party.
But, to be honest, I still kinda wish that I didn’t know about Pinterest… because it makes me want to buy things I shouldn’t, and it makes me want to bake ridiculous recipes.
Like this one.
Homemade Samoas Bars! Inspired by the Girl Scout cookie, also known as Caramel Delights.
This recipe is WAY more complicated than most of things I make.
It actually took me over an hour.
(I rarely ever spend more than an hour in my kitchen.)
It’s also probably one of the more decadent recipes I’ve ever posted. Definitely not an everyday indulgence, but maybe a fun treat to serve at an Oscar Party this weekend?
Or simply for Fat Tuesday? 😉
Thanks a lot, Pinterest.

If you feel like spending more than an hour in YOUR kitchen to make these bars, the recipe is actually pretty simple. I used a few of my go-to recipes to create these layered bars, so I’d be guaranteed a tasty result!
Grain-Free Samoas Bars
makes 16 piecesinspired by Pinterest
Cookie Layer:
Preheat your oven to 350F. For the base, I whipped-up a batch of Grain-Free Shortbread cookie dough. (Using coconut oil, instead of butter)
Press the dough evenly into a parchment-lined 8×8″ glass dish, and bake for 15-18 minutes at 350F, until golden brown.
Let cool while you prepare the rest of your layers.

Rather than coating the bottoms of these bars in melted chocolate (like the cookies), I opted for a middle layer of chocolate instead.
Melted Chocolate Layer:
- 3 oz. 70% dark chocolate
- 1 teaspoon coconut oil
- 1 tablespoon maple syrup (optional)
Melt all the ingredients together, and stir well.
Evenly spread the melted chocolate over the cookie layer, then allow to set while you prepare the final layer.

Coconut Layer:
Detox Macaroon batter + 1 Tablespoon Blackstrap Molasses, for a more caramel-like flavor.
Mix and spread evenly over the chocolate layer, then return to the oven to bake for an additional 20 minutes at 350F.
*Note: For an extra-crispy crust on top, place under the broiler for 1-2 minutes–> but watch closely!! Sugar burns quickly, and smells awful. Not that I would know.
Allow the bars to cool for 20 minutes in the pan, then remove using the parchment paper, and allow to cool completely on a cooling rack.
Cut into 16 squares, and drizzle with additional melted chocolate, if desired.
Totally decadent, but totally worth it. Enjoy!

Fat Tuesday, indeed. 😉

Reader Feedback: Are any of you celebrating Fat Tuesday? What’s the most decadent dessert you’ve made lately? These bars definitely take the cake for me, but at least they’re properly combined and grain-free!
Wow, these look amazing!! I love layered treats!! mmm..mmm! Have a great day!
Oh my goodness, I think you read my mind! I purchased girl scout cookies for my husband yesterday and was bummed I couldn’t buy any samoas for me since I can’t have gluten! Thank you for solving my craving! 🙂
Glad to help!
I think I’d be happy eating JUST the macaroon batter, drizzled with chocolate, if you want to make the process go faster, too. LOL 😉
Thank you,,,I know what you mean about pininterest! And I see all those samosa recipes too,,,so thank you again!
Wow that’s funny I just found these on your blog… I just made vegan thin mints that were to die for, and samoas bars were on the list for tomorrow! Now I’m conflicted and want to try your recipe instead of the one I found… how close to samoas do they taste? Samoas are quite possibly my favorite Girl Scout cookie. It would be neat to make healthified versions of all of them…
It’s been so long since I’ve had a real Samoa, I can’t even remember what they taste like anymore! My bars definitely have more of a maple-flavor to them, thanks to the macaroon batter, so if you’re looking for that traditional, buttery-caramel flavor, these won’t be quite as authentic.
Because these were a little time-consuming to make, I think next time I’d just whip up the macaroons, and drizzle them with dark chocolate for a similar (faster) effect!
Happy cookie eating! 🙂
MUST TRY!
Like every other recipe I have tried on here, these are *AMAZING*!! My husband actually cheered when he tried them. !! I was wondering whether these need to be stored in the fridge? And whether you have tried freezing them? Thank you, once again, for spending time making super-delicious treats and sharing them with all of us!
We freeze everything in our house– we like to eat our desserts cold! So yes, they freeze very well. 🙂
You don’t have to refrigerate these, but it will extend their shelf life. I think they’d last up to 4 days on the counter, loosely covered. They should last at least a couple weeks when stored in a sealed bag in the fridge, and indefinitely stored in the freezer.
So glad you both enjoyed them!
I just discovered your website upon forcing myself (like, literally pointing my body towards and forcing my feet to move) to return to my better, healthy, and organic eating habits that I’ve taken up on and off for some 15-17 years or more. (Yes, kicking myself.)
Just wanted to say: AWESOME recipes! The pix garner at least 70% of the interest because drool is incredibly effective. Great pix, wonderful notes, great motivation. Thank you so much! (And enough can not be said as to your charming sense of humor!)
A big thumbs up!!
I just happened to stumble across your website and I am SO glad I did. I made the vegan mac & cheese tonight and it was wonderful. I baked it uncovered and it dried out a bit. Next time I will cover it when I bake it. I also made the Hot Chocolate – AMAZING!
I love your site. I have made so many things off of it, and tonight I tried making these delectable treats. Amazing as always. You have the best ideas! 🙂
