I’ve got a sweet and tangy treat to share with you today.
This quick lemon frosting adds a bright, tart flavor to my favorite grain-free sugar cookies, making them the perfect spring or summer treat. Loaded with healthy, satiating fats from coconut oil, and naturally sweetened with honey, this mouth-watering topping takes any baked good over the top–> without a sugar crash later.
Needless to say, these didn’t last long at our Easter potluck.

Quick Lemon Frosting
makes about a 1/4 cup
(enough to frost an entire batch of grain-free sugar cookies)
Ingredients:
2 tablespoons coconut oil, softened
2 tablespoons raw honey
1 teaspoon fresh lemon juice
zest of half a lemon
pinch of sea salt
Directions:
Combine all the ingredients, then mix until smooth and creamy.
Note: If your frosting seems too runny, place the bowl in the fridge to chill for about 20 minutes, then stir until evenly thickened. This frosting will melt at temperatures above 76F, so it’s not the best option for serving outdoors on a hot day…
Spread this tart frosting onto your favorite cookies or cupcakes, then chill for an hour, allowing the frosting to set.
Serve chilled or at room temperature, and enjoy!

- Spread onto your favorite cookies or cupcakes, then chill for an hour, allowing the frosting to set. (*note: this recipe produces enough frosting for one batch of my grain-free sugar cookies)

I love lemon! One of my favourite desserts is my Gran’s lemon meringue pie – mainly for the meringue part but I like the lemony bit too! Not sure what happened but mine completely failed. Some of my coconut oil was melted, and i used the eqiv (30/35ml) maple syrup instead of honey and the juics of half a lemon instead of the juice and zest and it looks nothing like your picture. It looks like separated coconut oil and honey and im 100% sure its unusable. Not sure what made it like that? Shame cos the frosting for the paleo/vegan lemon cookie recipe i had needed coconut butter/manna and im not sure where you get that in Paris and coconut oil is much easier to find. Looks like i need to find another recipe which will hopefully work.

It didn’t really work for me. I ended up with a soupy mess that smelled like oil. I just added a cup and a half of powdered sugar and 1/2 cup of milk and it turned out fine.
This is a life saver. I just put an extremely small amount of lemon extract (2-3 drops) in it as well and it brought a kick out of coconut lemon pound cake muffins I made. It helps when I find recipes with no refined sugar.
