I thought these muffins were delicious! I substituted Monk Fruit Sugar for the Coconut sugar since my daughter is allergic to all things coconut.

This recipe is heavenly! I was debating on what I can make with some apples that I needed to use. So thrilled I stumbled upon this recipe. The muffins are flavorful, fluffy and moist and healthy! I added a 1/2 teaspoon of pumpkin pie spice, a pinch of ginger and another splash of vanilla. Absolutely fabulous! Thank YOU!
