Hey, this is my fourth or fifth time making this recipe and the first time making it with the new March 2023 ingredients.

One or two batches were flops, especially when I used a large muffin tin. I didn’t want to give up because my kids love them so much. I have donated my mini muffin tins and I seem to cycle through buying and donating often, so I gave up and tried the bigger muffin tins today.

Modifications: Oat flour blended in Vitamix, then removed and set aside. Subbed school-safe pumpkin seed butter and most of the rest of the wet ingredients including some cubes of frozen spinach and got it to a liquidy consistency. I did half maple syrup and half coconut sugar because I was out of honey and I thought a 1:1 of maple syrup to honey would be too liquidy. I left the eggs out of the blender because I’m not a fan of overworked eggs inside muffins. I separated my wet and dry ingredients and added the yolks to the wet, and then I whipped and folded the egg whites in. Added vanilla too. The batter is phenomenal! No issues with gumminess.

I did add a couple of tablespoons of cacao powder and 1/2 tsp baking soda along with all the other ingredients as listed. I baked them in silicone mini muffin cups for 14 minutes and got 27. The silicone cups tend to be smaller than the equivalent metal. But, they taste awesome and texture is perfect! I will be freezing these to grab on the way to the office in the morning. Thanks for another awesome recipe!

Hi Ashley! I updated this recipe because the texture was consistently more “gummy” when I baked them as full-size muffins, which was a common reader request. Adding more eggs gives them more protein and a much better texture like you would expect from a traditional muffin. Let me know if you give this a new version a try! But, you can also always find the original recipe here, if you prefer to stick to that one.

Hi Catherine! I re-tested this recipe to help with the deflating issue. My kids didn’t mind that when they were toddlers, but now that they are older, they have become more discerning eaters. The original recipe was perfect. You did not have to change it. You also did not need to bury the original in your updated page as a hyperlink among the content that no one ever reads. This ‘new version’ should have been a brand new page with a brand new and different muffin image – it is beyond misleading. Calling for this updated version to use 3 eggs is ridiculous. I wasted ingredients before realizing the post changed. There are few things more frustrating than wasting food. Zero stars

Made these as is only substituting maple syrup for honey and tightly packed 2 + cups of spinach. Love how it all goes into blender and poured into muffin tins (I used 6 large and 12 mini pans) and it was perfect with minimal clean up. Large muffins were denser than minis but not gummy at all. There is only one problem: they are so light and delicious that I could literally eat the entire batch by tmrw, I kid you not! My new favorite muffin recipe for sure, thanks for sharing!
p.s. I do not have a Vitamix so perhaps a less powerful blender makes them less gummy?

My daughter loves the taste – especially since we add 5 chocolate chips to the top of each one. However, I have a problem with it collapsing. Am I over mixing it? Maybe packing in too much spinach? Any tips so that it can stay puffed?
